Courgette and lemon cake
This year we took on an allotment whilst also looking after our two young children. Yes I think we are a bit crazy!! We planted several courgette plants and had an abundance of courgettes to eat. Bearing in mind I am the only member of my family who will eat courgettes I have had to find some interesting ways to hide them in our meals.
I found a courgette and lemon cake recipe which I have tested and tweaked until I was happy. I made ours a dairy free version so that my daughter could also have some. Everyone enjoyed it! Cake for the win.
Ingredients:
Margarine /butter for greasing
350g courgette raw
125ml vegetable oil
2 free range eggs (I used large eggs)
300g caster sugar
zest and juice of 1 lemon
300g plain flour
1tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
For the lemon drizzle:
85g icing sugar
1 tbsp lemon juice
lemon slices to decorate
Bake for approximately 1 hour at 150 C
